Ingredients
  

Filling

  • 2 cups fresh strawberries, hulled and sliced Use ripe, firm strawberries for best texture.
  • 1 tablespoon sugar
  • 1 tablespoon cornstarch Reduce slightly if using frozen strawberries.
  • 1 teaspoon lemon juice

Galette Crust

  • 1 pre-made vegan pie crust Store-bought crust for quick prep.
  • 1 tablespoon non-dairy milk For brushing the crust.
  • 1 tablespoon raw sugar For sprinkling on top.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, combine the sliced strawberries, sugar, cornstarch, and lemon juice. Toss gently to combine.
  • Roll out the vegan pie crust on a baking sheet lined with parchment paper.
  • Spoon the strawberry mixture onto the center of the crust, leaving a border.
  • Fold the edges of the crust over the strawberries, pleating as you go to create a rustic look.
  • Brush the crust with non-dairy milk and sprinkle with raw sugar.

Baking

  • Bake for 25-30 minutes or until the crust is golden brown.
  • Let cool slightly before slicing and serve.

Notes

Serve warm or at room temperature. Top with dairy-free ice cream or coconut whipped cream. Store leftovers in an airtight container in the fridge for up to 3 days.
