  • 1 pound ground beef or turkey Use lean meat if preferred.
  • 1 cup uncooked long-grain rice
  • 2 cups beef broth or water Beef broth adds more flavor.
  • 1 15-ounce can black beans, rinsed and drained
  • 1 15-ounce can diced tomatoes with green chilies You can use regular diced tomatoes if preferred.
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Chopped green onions (for garnish)
  • Sour cream (for serving)
  • Sliced jalapenos (optional, for serving)

Cooking

  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked; drain excess fat.
  • Add the uncooked rice, beef broth (or water), black beans, diced tomatoes, and taco seasoning to the skillet. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  • Sprinkle cheese over the top and cover until melted, about 2-3 minutes.
  • Garnish with green onions and serve with sour cream and jalapenos if desired.

Notes

Experiment with different types of meat, add more vegetables like bell peppers or corn for added nutrition, and consider using different cheese blends. For a vegetarian option, substitute meat with extra beans or a plant-based meat alternative.
