  • 2 medium potatoes Can swap for sweet potatoes if desired

  • to taste Pepper For seasoning
  • as needed tablespoon Olive oil or butter For cooking

Instructions

Preparation

  • Season the steak generously with salt and pepper.
  • Heat olive oil or butter in a skillet over medium-high heat.

Cooking

  • Cook the steak to your desired doneness, approximately 4-5 minutes per side for medium.
  • Remove the steak from the skillet and let it rest.
  • While the steak is cooking, dice the potatoes and add them to a pot of salted boiling water.
  • Cook the potatoes until tender, about 10-15 minutes, then drain.
  • In the same skillet, add a bit more olive oil or butter if needed and sauté the potatoes until golden and crispy, about 5-7 minutes.
  • In a separate pan, fry the eggs to your liking.
  • Slice the steak and serve it on a plate with the crispy potatoes and fried eggs.

Notes

Serve hot on a plate with eggs on top or to the side. A small green salad or steamed veggies can add color and balance to your meal. Allow steak to rest for 5 minutes before slicing to keep juices inside.
