  • 1 pound salmon, cooked, skin removed and flaked into pieces Use cooked salmon for best results.
  • 2 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter, divided
  • ¾ cup minced yellow onion
  • ¾ cup minced celery
  • ½ cup minced red bell pepper
  • 1 clove garlic, minced
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce, optional Adjust to taste.
  • ¼ cup minced fresh parsley, plus more for garnish
  • 1 cup breadcrumbs Use panko for a lighter texture.
  • 2 large eggs, beaten Helps bind the ingredients.
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • Lemon wedges for serving Enhances flavor.

Instructions
 

Preparation

  • Heat 1 tablespoon of the olive oil and butter in a skillet over medium heat.
  • Add the onion, red bell pepper, and celery; cook until softened, about 5 minutes.
  • Add the garlic and cook for an additional minute until fragrant.
  • Remove from heat and set aside.
  • In a large bowl, combine the sautéed vegetable mixture with all other ingredients. Mix well using a spatula.
  • Form the mixture into patties, using about 1/3 cup for each, and place on a parchment-lined baking sheet.

Cooking

  • Heat the remaining tablespoon of olive oil and butter in the same skillet over medium heat.
  • Cook the patties in batches for about 4 minutes per side or until golden brown.

Serving

  • Serve warm with lemon wedges on the side.
  • Top with extra parsley or a dollop of mayo or tartar sauce.

Notes

Chill formed patties for 15 minutes before cooking to help them hold shape. Drain any excess liquid from the cooked salmon to avoid soggy patties.
