  • 1 pound gnocchi
  • 2 cups cooked chicken, shredded Use pre-cooked chicken to save time.
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth Add more if the mix seems thick.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Taste and adjust before adding cheese.
  • 1 cup shredded cheese Add 1/4 to 1/2 cup heavy cream for creamier texture if desired.

  • In a large pot, combine the chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper.
  • Bring to a simmer over medium heat.
  • Add the gnocchi and cook for about 5-7 minutes, or until gnocchi are tender.
  • Stir in the shredded cheese until melted and combined.
  • Serve warm.

Notes

Best served hot in bowls, garnished with extra cheese or fresh parsley. Store cooled leftovers in an airtight container in the refrigerator for 3-4 days. Reheat on the stove or in the microwave.
