Ingredients

Main Ingredients

  • 2 cups pasta (penne or rotini) Use pasta shapes like penne or rotini for better sauce adherence.
  • 1 pound chicken breast, diced For a quicker option, use cooked rotisserie chicken.
  • 1 tablespoon olive oil
  • 3 cups chicken broth Can be substituted with canned soup if needed.
  • 1 cup shredded cheddar cheese Can swap cheddar for mozzarella for a milder flavor.
  • 1 cup milk Watch for thickness if substituting with canned soup.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped parsley for garnish Add extra for a bright finish.

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced chicken and season with salt, pepper, and garlic powder. Cook until browned.
  • Add the pasta, chicken broth, and milk to the pot. Stir well.
  • Bring to a boil, then reduce heat and simmer for about 10-12 minutes or until the pasta is cooked.
  • Stir in the cheddar cheese until melted and creamy.
  • Serve hot, garnished with chopped parsley.

Notes

Cool the pasta to room temperature, then store in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of milk to restore creaminess. Keep heat moderate when simmering to avoid sticking or burning. For added flavor, stir in a teaspoon of mustard or a pinch of smoked paprika.
