Ingredients
  

Main ingredients

  • 2 tablespoons olive oil For sautéing
  • 1 cup onion, chopped
  • 2 pieces carrots, sliced
  • 2 pieces potatoes, diced Cut into similar sizes for even cooking
  • 2 cups vegetable broth Use low-sodium for a healthier option
  • 1 cup green peas Stir in at the end
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Add at the end to taste

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until softened.
  • Stir in carrots and potatoes, cooking for a few minutes.

Cooking

  • Pour in vegetable broth and add thyme. Bring to a boil.
  • Reduce heat and let simmer for about 20 minutes.
  • Stir in green peas and cook for an additional 5 minutes.
  • Season with salt and pepper to taste. Serve warm.

Notes

Let the stew cool to room temperature before storing. Keep it in an airtight container in the fridge for up to 3 days or freeze in a freezer-safe container for up to 3 months.
