  • 1 can white beans (drained and rinsed)
  • 1/2 cup peanut butter or almond butter Swap for milder taste with almond butter.
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Use white chocolate chips for a sweeter flavor.

Preparation

  • Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  • In a blender or food processor, combine the white beans, peanut butter, brown sugar, maple syrup, vanilla extract, baking powder, and salt. Blend until smooth.
  • Stir in the chocolate chips.
  • Pour the mixture into the prepared baking pan and spread evenly.
  • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  • Allow to cool before cutting into squares.

Notes

Serve at room temperature for best chew. Top with a sprinkle of sea salt, a dusting of cocoa, or a scoop of ice cream for a simple treat. Store in an airtight container for up to 2 days at room temp, up to 5 days in the fridge, or freeze for up to 2 months.
