  • 4 large flour tortillas
  • 6 pieces eggs
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup cooked sausage or bacon, crumbled
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 pieces avocado, sliced

Cooking

  • In a skillet, cook the diced onions and bell peppers over medium heat until softened. Add the crumbled bacon or sausage and stir to combine.
  • In a bowl, whisk together the eggs, salt, and pepper. Pour the eggs into the skillet and scramble until cooked through.
  • On each tortilla, layer the scrambled egg mixture, cheese, and avocado slices.
  • Roll up the tortillas tightly to form burritos.
  • Serve with salsa on the side.

Notes

These burritos can be stored in foil or airtight containers in the fridge for up to 4 days. They can be reheated in the microwave or oven. For a healthier twist, consider adding spinach or mushrooms. A vegan version is possible by replacing eggs with tofu scramble.
