  • 1.5 pounds boneless, skinless chicken thighs, cut into small pieces
  • 2 teaspoons all-purpose seasoning
  • 2 teaspoons barbecue seasoning
  • 1/3 cup red onion, thinly sliced
  • 1 small green bell pepper, diced
  • 1/3 cup barbecue sauce
  • 2 slices cheddar cheese for melting
  • 2 slices pepper jack cheese for a mild kick
  • 3 pieces hoagie rolls

  • Heat a large skillet over medium-high heat.
  • Add the chicken pieces and sprinkle with the all-purpose seasoning and barbecue seasoning. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is browned and cooked through.
  • Add the sliced onion and diced bell pepper to the skillet. Cook for 3 to 4 minutes, stirring often, until the vegetables soften.
  • Pour in the barbecue sauce and stir until everything is evenly coated.
  • Add the cheddar and pepper jack cheese. Stir until the cheese melts into the chicken mixture and becomes creamy.
  • Spoon the hot chicken filling into the hoagie rolls.
  • Serve right away, or wrap the sandwiches in foil for 1 to 2 minutes before serving for a softer, warmer sandwich.

Notes

For variation, try using chicken breast instead of thighs or swapping the BBQ sauce for buffalo sauce for a spicy twist. Store leftover filling in an airtight container in the fridge for up to 3 days. Reheat filling in a skillet over medium heat.
