Preparation

  • Grate the zucchini finely.
  • In a bowl, combine the grated zucchini with flour, sugar, baking powder, and olive oil.
  • Mix well until all ingredients are blended.
  • Pour the mixture into a baking pan.
  • Bake at 350°F (175°C) until golden brown, about 30 minutes.

Notes

Serve warm or at room temperature. Pairs well with butter or cream cheese. Store in an airtight container for up to three days, or freeze for longer storage. Add nuts or chocolate chips for extra flavor if desired.
