Ingredients
  

Vegetables and Tofu

  • 4 cups Seasonal veggies (e.g., squash, kale) Feel free to mix in any seasonal veggies you prefer.
  • 14 oz Italian herb tofu Try marinating the tofu for added flavor.

Sauce and Seasoning

  • 2 tbsp Tahini or hummus sauce Serve drizzled on top of the dish.
  • 2 tbsp Olive oil For drizzling over the veggies and tofu.
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • to taste Other herbs (e.g., basil, oregano) Adjust according to your taste preference.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Chop the seasonal veggies and arrange them on a sheet pan.
  • Cube the Italian herb tofu and add it to the pan.
  • Drizzle with olive oil and season with salt, pepper, and garlic powder.
  • Toss everything to combine.

Cooking

  • Roast in the oven for 25-30 minutes, stirring halfway through.

Serving

  • Serve your Winter Sheet Pan Meal hot right from the oven with tahini or hummus sauce drizzled on top.

Notes

If you have leftovers, let them cool down and store them in an airtight container. Refrigerate for up to 3 days. You can reheat in the oven or microwave before serving again. Can swap tofu for chickpeas or another protein for variation.
