  • 1 kg Wiltshire gammon Can use smoked gammon for different flavor
  • 4 pieces Free-range eggs Fry in a little oil
  • 800 g Potatoes For making chips, peeled and cut
  • 400 g Canned beans Can substitute with fresh beans
  • to taste Salt and pepper For seasoning
  • Oil for frying Use medium-hot oil for frying chips

Preparation

  • Prepare the gammon by boiling or roasting it until fully cooked.
  • While the gammon is cooking, peel and cut the potatoes into chip shapes, then rinse them in cold water.

Cooking Chips

  • Cook the chips in simmering water until tender, then drain and let them dry.
  • Heat oil in a deep fryer or large pan, and fry the chips until golden brown and crispy.

Finishing Touches

  • In a separate pan, heat the beans until warmed through.
  • Fry the free-range eggs in a little oil, seasoning with salt and pepper.
  • Serve the gammon sliced with the chips and beans on the side, topped with a fried egg.

Notes

For extra crispness, dry the chips well after boiling. Rest the cooked gammon for a few minutes before slicing to keep juices.
