Ingredients
  

Vegetables

  • 2 cups potatoes, diced Use any type of potatoes.
  • 1 cup carrots, sliced
  • 1 cup peas Fresh or frozen peas work.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Liquids and Seasonings

  • 4 cups vegetable broth Make sure it's gluten-free if necessary.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • to taste Salt and pepper Adjust according to preference.

Fat

  • 2 tablespoons olive oil Can substitute with other oils.

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add onion and garlic, and sauté until fragrant.

Cooking

  • Add potatoes and carrots, cooking for about 5 minutes.
  • Pour in vegetable broth and add peas, thyme, oregano, salt, and pepper.
  • Bring to a boil, then reduce heat and let simmer for 20-25 minutes, until vegetables are tender.

Serving

  • Serve hot in bowls and garnish with fresh herbs or grated cheese if desired.

Notes

Use seasonal vegetables for the best flavor. For a thicker stew, blend a portion and return it to the pot. Can add beans for extra protein.
