Preparation

  • Preheat the oven to 350°F (175°C).
  • In a blender, combine the roasted sweet potato, soaked cashews, maple syrup, vanilla, cinnamon, and nutmeg. Blend until smooth.
  • Pour the filling into the gluten-free pie crust.
  • Bake for 45-50 minutes or until the filling is set.
  • Let it cool before serving.

Notes

Serve chilled or at room temperature. Pairs well with vegan whipped cream or a scoop of dairy-free ice cream. To store, cover the pie with plastic wrap or place in an airtight container. It can stay in the refrigerator for up to 5 days.
