  • 400 g fresh spinach
  • 200 g firm tofu, cubed Press lightly to remove extra water for firmer cubes.
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, minced

Spices and oil

  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • to taste Salt
  • 2 tablespoons oil For cooking

Preparation

  • Heat oil in a pan and add cumin seeds. Once they crackle, add chopped onions, garlic, and ginger. Sauté until onions are translucent.
  • Add the chopped tomatoes and cook until they become soft.
  • Add the spinach and cook until wilted. Blend the spinach mixture until smooth if desired.

Cooking

  • Add the cubed tofu, garam masala, turmeric, and salt. Stir well and cook for about 5-7 minutes.

Serving

  • Serve warm with rice or flatbread.

Notes

You can pair it with a light drink like the vegan moringa shake dish for weight management for a simple, balanced meal. Adjust spices to taste and add red chili for heat if you like it spicy.
