Ingredients
  

Wet Ingredients

  • 1 cup almond milk (or other plant-based milk)
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil (for greasing the waffle iron) Use for greasing

Dry Ingredients

  • 1 cup rolled oats Use rolled oats, not quick oats
  • 1 tbsp flaxseed meal Can substitute with ground flaxseed
  • 2 tsps baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips

Instructions
 

Preparation

  • In a blender, combine rolled oats and almond milk and blend until smooth.
  • Add flaxseed meal, maple syrup, baking powder, cinnamon, and salt. Blend until well combined.
  • Stir in chocolate chips.

Cooking

  • Preheat the waffle iron and grease it with coconut oil.
  • Pour the batter into the waffle iron and cook according to manufacturer's instructions until golden brown.
  • Serve warm, and enjoy!

Notes

Serve warm with fresh fruit like berries or banana slices. Drizzle with extra maple syrup or a spoonful of dairy-free yogurt. Add vegan butter or nut butter for extra richness.
