Ingredients
  

Crust

  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt

Filling

  • 1/2 cup lemon juice
  • 1/2 cup maple syrup
  • 1/4 cup cornstarch
  • 1 tablespoon lemon zest

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • In a mixing bowl, combine the oats, almond flour, melted coconut oil, maple syrup, and salt to form the crust. Press the mixture into the bottom of the prepared baking dish.
  • Bake the crust for 10-12 minutes until lightly golden.

Filling

  • In another bowl, whisk together lemon juice, maple syrup, cornstarch, and lemon zest until smooth.
  • Pour the lemon filling over the pre-baked crust and return to the oven. Bake for an additional 20-25 minutes, until the filling is set.

Cooling

  • Allow to cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
  • Serve chilled and enjoy!

Notes

Serve Vegan Lemon Bars cold for a clean, firm slice. Dust with powdered sugar or top with extra lemon zest. Keep the bars in the fridge in an airtight container for 4-5 days. You can freeze sliced bars for up to 2 months; thaw in the fridge before serving. Press the crust firmly, whisk the filling well, and use fresh lemon juice and zest for the best flavor.
