  • 1 cup Soy curls
  • 2 teaspoons Cumin
  • 2 teaspoons Coriander
  • 1 teaspoon Turmeric
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 1 medium Onion, chopped
  • 1 medium Tomato, chopped
  • 1/4 cup Cilantro, for garnish
  • 2 tablespoons Oil, for baking Use a light oil spray for even browning.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Soak soy curls in warm water for 10 minutes, then drain and squeeze out excess water.
  • In a bowl, mix the soaked soy curls with spices, salt, garlic, ginger, and a bit of oil.
  • Spread the soy curl mixture on a baking sheet.

Baking

  • Bake for 20-25 minutes until crispy, flipping halfway through.

Sautéing

  • In a pan, sauté chopped onions and tomatoes until soft.
  • Add the baked soy curls to the pan and mix well.
  • Garnish with cilantro and serve hot.

Notes

Pat the soy curls well after soaking to help them crisp. Flip the soy curls once at mid-bake for best texture. Adjust spices to your heat preference.
