Main Ingredients

  • 1 cup long-grain rice Rinse for fluffier grains if desired.
  • 2 cups vegetable broth
  • 1 cup veggie crumbles Check the label for gluten-free options if needed.
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning Adjust to taste as some mixes are saltier.
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil

Preparation

  • Heat olive oil in a large pan over medium heat.
  • Add the diced onion, bell pepper, and celery, and sauté until softened.
  • Stir in the minced garlic and cook for an additional minute.

Cooking

  • Add the veggie crumbles, Cajun seasoning, and smoked paprika, cooking until heated through.
  • Pour in the vegetable broth and bring to a boil.
  • Stir in the rice, reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked.
  • Fluff the rice with a fork, season with salt and pepper, and garnish with green onions before serving.

Notes

Cool the rice to room temperature before storing in an airtight container. It keeps for up to 4 days in the refrigerator. To reheat, add a splash of water and warm on the stove or in the microwave until hot. Optional: Add cooked black beans or kidney beans for extra protein, or use quinoa for a different texture.
