Ingredients
  

Vegetable Layers

  • 4 cups Mixed greens (lettuce, spinach, etc.) Use fresh, crisp vegetables for better texture.
  • 1 cup Cherry tomatoes, halved
  • 1 cup Shredded carrots
  • 1 cup Cucumber, diced
  • 1 medium Avocado, diced
  • 1/2 cup Coconut bacon Can substitute with tempeh or roasted chickpeas.

Dressing and Seasoning

  • 1/2 cup Aquafaba mayo dressing Can use any vegan dressing like tahini or vinaigrette.
  • to taste Salt
  • to taste Pepper

Instructions
 

Assembly

  • In a large bowl or dish, layer the mixed greens at the bottom.
  • Add the cherry tomatoes evenly on top.
  • Next, add the shredded carrots, followed by the diced cucumber and avocado.
  • Sprinkle the coconut bacon on top.
  • Drizzle with the aquafaba mayo dressing and season with salt and pepper.
  • Serve immediately or refrigerate until ready to serve.

Notes

This salad pairs well with grains like quinoa or rice. Best served chilled. To store, cover tightly and refrigerate. Best eaten within a day or two.
