  • 1 cup polenta Use fine or medium polenta for a softer crumb.
  • 1 cup water
  • 1 cup orange juice Freshly squeezed is best.
  • 1 cup sugar
  • 1/2 cup butter, softened Cream well with sugar.
  • 3 pieces eggs Add one at a time.
  • 1 teaspoon baking powder Ensure gluten-free if needed.
  • 1/2 teaspoon salt
  • Zest of 1 orange orange zest Zest before juicing to save time.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a cake pan.
  • In a pot, bring water to a boil and gradually add the polenta, stirring constantly until thickened.
  • Remove from heat and mix in the orange juice and zest.
  • In a separate bowl, cream the butter and sugar until fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • Combine the polenta mixture with the butter mixture.
  • Stir in baking powder and salt.
  • Pour the batter into the prepared cake pan.
  • Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  • Let cool before serving.

Notes

Serve warm or at room temperature. Dust with powdered sugar or serve with whipped cream or fresh orange segments. Store in an airtight container at room temperature for up to 2 days, in the fridge for up to 5 days, and freeze for up to 2 months.
