Brownie Batter

  • 1 can black beans, drained and rinsed Make sure the black beans are well-drained and rinsed to avoid a bean taste.
  • 1/2 cup cocoa powder Use good quality cocoa powder for a richer flavor.
  • 1/2 cup maple syrup or date syrup Add more syrup for sweetness if desired.
  • 1/4 cup almond butter or any nut butter
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chopped pecans Can be replaced with walnuts or omitted for nut-free option.
  • 1/2 cup date caramel Store-bought or homemade.

Preparation

  • Preheat the oven to 350°F (175°C) and grease a baking dish.
  • In a blender, combine black beans, cocoa powder, maple syrup, almond butter, baking powder, and salt until smooth.
  • Stir in chopped pecans.

Baking

  • Pour the batter into the prepared baking dish and swirl with date caramel.
  • Bake for 25-30 minutes or until a toothpick comes out mostly clean.
  • Let cool, then slice and serve.

Notes

Turtle brownies are best served warm, straight from the oven or after cooling. You can add a scoop of vanilla ice cream on top for an extra treat. To store, keep in an airtight container at room temperature for up to three days, refrigerate for up to a week, or freeze for longer storage.
