These refreshing Tropical Fruit Popsicles are made with coconut water and fresh fruits, perfect for cooling off during summer days.

Ingredients
  

Base Ingredients

  • 2 cups Coconut water Fresh, preferably unsweetened
  • 2 cups Fresh fruit (such as watermelon, pineapple, strawberries) Use ripe fruits for best flavor

Optional Ingredients

  • 1-2 tablespoons Sweetener Adjust sweetness to your taste
  • 1 tablespoon Lemon or lime juice Optional for added tang
  • as needed units Ice mold or popsicle molds For freezing the popsicles

Preparation

  • In a blender, combine the coconut water and fresh fruit until smooth.
  • If desired, add sweetener and lemon or lime juice to taste.
  • Pour the mixture into popsicle molds.
  • Insert sticks and freeze for several hours or until solid.
  • To serve, run warm water over the outside of the molds to help release the popsicles.

Notes

Serve your Tropical Fruit Popsicles by removing them from the molds and placing them on a plate or in a glass for a fun party treat. They are best enjoyed on hot days by the pool or as a dessert at family gatherings. To store, keep them in the freezer in their molds until ready to eat, or wrap them in plastic wrap and place them in an airtight container for longer storage. They should stay fresh for about two weeks.
