  • 4 pieces sausages Use good-quality pork or beef sausages
  • 1 cup all-purpose flour
  • 1 cup milk Use room temperature for lighter batter
  • 3 large eggs Use room temperature for lighter batter
  • 1 tablespoon vegetable oil For greasing the dish
  • Salt and pepper To taste
  • Herbs (such as thyme or rosemary) For seasoning

Preparation

  • Preheat the oven to 220°C (430°F).
  • In a large mixing bowl, combine flour, milk, and eggs. Whisk until smooth and season with salt and pepper.
  • In an oven-safe dish, add vegetable oil and place sausages in the dish. Bake for about 10 minutes until sausages are browned.
  • Quickly pour the batter over the sausages and return to the oven. Bake for an additional 20-25 minutes until the batter is puffed and golden.

Serving

  • Serve slices hot from the oven with warm gravy on the side.
  • Add roasted root veggies, steamed greens, or cranberry sauce for a Christmas touch.

Notes

Cool leftovers fully before storing in an airtight container. Keep in the fridge for up to 3 days and reheat in the oven to keep the crust crisp.
