Ingredients
  

For the Filling

  • 1 lb ground chicken
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice Fresh lime juice is recommended.
  • 1 tablespoon brown sugar
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 head lettuce (Bibb or Iceberg) For wrapping the filling.
  • Chopped peanuts for topping Add just before serving for crunch.

Preparation

  • In a large skillet, heat the oil over medium heat.
  • Add garlic and ginger; sauté until fragrant.
  • Add ground chicken and cook until browned.
  • Stir in soy sauce, lime juice, and brown sugar.
  • Cook until well combined and heated through.
  • Remove from heat and stir in carrots, green onions, and cilantro.

Serving

  • Spoon the chicken mixture into lettuce leaves and top with chopped peanuts.
  • Serve immediately with extra lime wedges and more chopped peanuts on the side.

Notes

Store the chicken filling in an airtight container in the fridge for up to 3 days. Keep the lettuce separate and chilled to stay crisp. For freezing, cool the cooked filling, place in a freezer-safe bag, and freeze up to 2 months.
