Ingredients
  

For the crostini

  • 1 loaf Baguette or Crostini crackers
  • 2 oz Olive oil For brushing

For the whipped cheese

  • 4 oz Goat cheese
  • 4 oz Cream cheese Use room temperature for easier mixing
  • 1 tbsp Fresh lemon juice
  • 1 tbsp Honey
  • to taste Salt and pepper

For the blueberry balsamic topping

  • 1 cup Fresh blueberries Can use frozen, thawed
  • 2 tbsp Balsamic vinegar

For garnish

  • to taste Fresh basil or mint For garnish

Preparation

  • Preheat the oven to 375°F (190°C). Slice the baguette into thin rounds and place them on a baking sheet.
  • Brush the crostini with olive oil and bake for about 5-7 minutes until golden and crispy.
  • In a bowl, mix the goat cheese, cream cheese, lemon juice, and honey until smooth. Season with salt and pepper.
  • In another small saucepan, cook the blueberries with balsamic vinegar on medium heat until the blueberries burst and the mixture thickens slightly.

Assembly

  • Spread the whipped goat cheese mixture on each crostini. Top with a spoonful of the blueberry balsamic mixture.
  • Garnish with fresh basil or mint, and serve immediately.

Notes

Store components separately for best texture. Keep whipped cheese in an airtight container in the fridge for up to 3 days. Store blueberry balsamic in a jar for up to 5 days.
