  • 2 cups Cantaloupe, cut into bite-sized pieces Use ripe cantaloupe for best flavor.
  • 1 cup Cherry tomatoes, halved Use ripe tomatoes for best flavor.
  • 1 cup Cucumber, diced
  • 1 medium Onion, diced
  • 1/4 cup Fresh mint, chopped Garnish with extra mint for serving.

Dressing Ingredients

  • 2 tablespoons Maple syrup Adjust to taste for sweetness.
  • 2 tablespoons Lime juice Freshly squeezed is best.
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper

Instructions
 

Preparation

  • Cut the cantaloupe into bite-sized pieces.
  • Halve the cherry tomatoes.
  • Dice the cucumber and onion.
  • In a large bowl, combine cantaloupe, cherry tomatoes, cucumber, onion, and mint.

Dressing

  • In a separate bowl, whisk together maple syrup, lime juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine.

Serving

  • Serve immediately or chill for a fresher taste.

Notes

The salad can be made ahead of time, but add the dressing just before serving for the best flavor. Store in an airtight container in the refrigerator for up to two days. Consider adding feta cheese or avocado for variation.
