Ingredients
  

For the filling

  • 1 tablespoon olive oil
  • 1/4 medium yellow onion Chopped
  • 1 cup cooked rice
  • 1 cup ground meat (beef, turkey, or chicken)
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Shredded cheese for topping Optional

For the peppers

  • 2 medium bell peppers Any color

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • In a skillet, heat olive oil over medium heat. Sauté the onion until translucent.
  • Add ground meat and cook until browned.
  • Stir in cooked rice, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper.
  • Stuff the mixture into each bell pepper. Place stuffed peppers upright in a baking dish.

Baking

  • Cover the dish with foil and bake for 30 minutes.
  • Remove the foil, add cheese on top if desired, and bake for an additional 10–15 minutes or until the peppers are tender.

Notes

Serve warm. Stuffed Peppers can be served on their own or alongside a fresh salad. For storage, allow them to cool completely, place in an airtight container, and store in the refrigerator for up to 3 days. They can also be frozen for up to 3 months.
