Ingredients
  

For the taco filling

  • 1 lb Steak (flank or sirloin) Seasoned and grilled
  • 2 ears Corn on the cob Grilled until charred
  • 2 Tbsp Olive oil For cooking
  • 1 medium Red onion Sliced for caramelization
  • 8 count Tortillas Warm just before serving
  • 1 cup Queso fresco Crumble on top
  • 1 count Lime Juiced for serving
  • 1/2 cup Cilantro Chopped for topping
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste
  • 1 tsp Chili powder For seasoning the steak

Preparation

  • Season the steak with salt, pepper, and chili powder, then grill or sear to desired doneness. Let it rest and slice thinly.
  • Grill the corn until charred, then cut the kernels off the cob.
  • In a skillet, caramelize sliced red onions until golden.
  • Warm the tortillas on a skillet or directly on the grill.

Assembly

  • Assemble the tacos by layering the steak, corn, caramelized onions, and crumbled queso.
  • Top with fresh cilantro and a squeeze of lime juice before serving.

Notes

Let the steak rest 5–10 minutes before slicing to keep juices. Char the corn well for a smoky bite. Cook onions low and slow so they turn sweet and soft. Warm tortillas just before serving to keep them flexible.
