  • 2 cups fresh spinach Use fresh spinach for best flavor.
  • 1 cup mushrooms, sliced Use pre-sliced for quicker prep.
  • 1 can (15 oz) beans (black beans or cannellini), drained and rinsed Any canned beans can be used.
  • 2 tablespoons olive oil For sautéing.
  • 2 cloves garlic, minced For flavor.
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat Add for spiciness.

Cooking

  • Heat olive oil in a large pan over medium heat.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add the sliced mushrooms and cook until tender, about 5 minutes.
  • Stir in the beans and cook for another 3-4 minutes to heat through.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Season with salt, pepper, and red pepper flakes if desired.
  • Serve warm.

Notes

Cool the dish to room temperature before storing. It can be kept in an airtight container in the fridge for up to 4 days. Reheat gently on the stove or in the microwave until hot. Use fresh spinach and drain beans well to avoid extra liquid.
