  • 2 cups fresh spinach Use young and tender spinach.
  • 1 cup mushrooms, sliced Any variety of mushrooms can be used.
  • 2 cloves garlic, minced Fresh garlic is recommended for best flavor.
  • 1 cup cashew mozzarella Or any store-bought alternative.

Sandwich Components

  • 4 slices bread Your choice of bread.
  • 2 tablespoons olive oil
  • to taste Salt and pepper

Preparation

  • In a skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté until they are caramelized, about 5–7 minutes.
  • Add minced garlic and spinach, cooking until the spinach is wilted. Season with salt and pepper to taste.
  • Preheat a separate pan or griddle over medium heat.

Assembly

  • Assemble the sandwiches by layering the mushroom and spinach mixture on one slice of bread, topping it with cashew mozzarella, and placing another slice of bread on top.

Cooking

  • Grill the sandwiches in the preheated pan until golden brown on both sides and the cheese is melted, about 3–4 minutes per side.
