  • 1 package gnocchi You can use store-bought gnocchi.
  • 1 cup fresh spinach Fresh spinach is preferred for best texture.
  • 1 cup artichoke hearts Canned or frozen artichoke hearts are acceptable.
  • 1 cup cream cheese Can substitute with vegan alternative.
  • 1/2 cup grated Parmesan cheese Nutritional yeast can be used for vegan option.
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • to taste Olive oil For cooking the garlic and vegetables.

Preparation

  • In a large skillet, heat olive oil over medium heat.
  • Add minced garlic and sauté until fragrant.
  • Add spinach and artichokes, cooking until the spinach is wilted.

Cooking

  • Stir in the cream cheese and allow it to melt.
  • Add the cooked gnocchi to the skillet, mixing well.
  • Season with salt and pepper to taste.
  • Sprinkle with Parmesan or nutritional yeast before serving.

Notes

Serve hot for best texture. Top with extra Parmesan, black pepper, or red pepper flakes for heat. Store in an airtight container in the refrigerator for up to 3 days.
