  • 1 lb spicy Italian sausage Use good-quality spicy Italian sausage for best flavor.
  • 1 can (15 oz) cannellini beans, drained and rinsed Drain and rinse beans to lower sodium and improve taste.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use vegetable broth to make it meat-free if using plant-based sausage.
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups kale or spinach, chopped Add greens at the end so they stay bright and not mushy.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for sautéing as needed Olive oil

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and garlic, and sauté until softened.
  • Add the spicy Italian sausage and cook until browned.
  • Stir in the diced tomatoes, cannellini beans, chicken broth, and Italian seasoning.
  • Bring to a simmer and cook for about 15 minutes.
  • Add the chopped kale or spinach and cook for an additional 5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot.

Notes

Cool the soup to room temperature before storing. Store in airtight containers in the fridge for up to 4 days or freeze for up to 3 months. Thaw in the fridge and reheat on the stove.
