  • 4 large large tomatoes, chopped Use ripe tomatoes for the best flavor.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons oil Any cooking oil will work.
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder Adjust to taste.

  • 3 cups vegetable broth
  • to taste Fresh cilantro for garnish

Preparation

  • Heat oil in a pot over medium heat. Add cumin seeds and let them sizzle.
  • Add chopped onions and sauté until they turn translucent.
  • Stir in minced garlic and ginger, cooking until fragrant.
  • Add chopped tomatoes and cook until they break down.
  • Mix in coriander, turmeric, red chili powder, and salt.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 10-15 minutes.
  • Blend the soup until smooth and return to the pot.
  • Garnish with fresh cilantro before serving.

Notes

Store in the fridge for 3-4 days. Cool the soup and store in an airtight container. You can also freeze it for up to 2 months. Consider enhancing the soup with cream for richness or beans for heartiness.
