Ingredients
  

For the roasted poblano

  • 4 pieces fresh poblano peppers Roast until blistered for best flavor

For the cheese mixture

  • 16 ounces cream cheese, softened Soften fully for smooth mixing
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese Consider substituting with pepper jack for extra heat
  • 0.25 cup finely chopped chives
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pieces finely chopped poblano pepper Used in cheese mixture

For the burgers

  • 6 pieces beef burger patties About 1/3 pound each; seasoned to taste
  • 6 pieces brioche-style burger buns Toast for best texture
  • Burger seasoning To taste

Instructions
 

Roasting Poblanos

  • Set the oven to broil on high. Line a baking sheet with foil and arrange the poblanos.
  • Broil the peppers, turning every few minutes until the skins are blistered and mostly blackened, about 10–15 minutes.
  • Place the peppers in a bowl and cover tightly to steam for 30 minutes. Cool, peel the skins, remove the seeds, and cut off the stems.
  • Slice three poblanos in half lengthwise and finely chop the remaining pepper. Set aside.

Preparation

  • Preheat grill to high, about 500°F.
  • In a large bowl, mix cream cheese, cheddar, mozzarella, chives, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth. Stir in the chopped poblano.
  • Season the patties on both sides with burger seasoning.

Cooking

  • Place the seasoned patties on the hot grill and cook for 1.5 minutes on the first side.
  • Flip the patties and spoon a generous amount of the poblano cheese mixture over each one. Cook for 2–3 more minutes, until done to your liking.
  • Remove burgers from the grill.
  • Place buns cut-side down on the grill and toast for 30–60 seconds until golden.

Assembly

  • Place each burger on the bottom bun, top with one roasted poblano half, then the top bun. Serve right away.

Notes

Store cooled components separately in airtight containers in the fridge for up to 3 days. Reheat patties and cheese mix on the grill or in a skillet, then assemble with fresh buns.
