  • 1 whole whole chicken
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • to taste Wood chips for smoking (e.g., hickory or applewood)

Preparation

  • Preheat your smoker to 250°F (121°C).
  • In a small bowl, mix together paprika, garlic powder, onion powder, salt, and pepper.
  • Rub the chicken with olive oil and then coat it with the spice mixture evenly.
  • Place the wood chips in the smoker.

Smoking

  • Place the chicken in the smoker, breast side up, and smoke for about 4 to 5 hours, or until the internal temperature reaches 165°F (74°C).
  • Once done, remove from the smoker and let rest for 15 minutes before carving. Serve and enjoy!

Notes

For best results, pat the chicken dry for better skin browning. Use a probe thermometer to track the internal temperature. Soak wood chips for 30 minutes for more steady smoke if needed, and keep the smoker lid closed to maintain a steady temperature.
