  • 4 pieces lamb shanks
  • 2 tablespoons olive oil
  • 1 piece onion, chopped
  • 2 pieces carrots, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine Use a good-quality red wine for richer gravy.
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Preparation

  • Heat the olive oil in a large skillet over medium-high heat. Season the lamb shanks with salt and pepper, then sear them in the skillet until browned on all sides.
  • Transfer the browned shanks to a slow cooker.
  • In the same skillet, add the chopped onion, carrots, and garlic, sautéing until soft.
  • Pour in the beef broth and red wine, adding the rosemary and thyme. Bring to a boil, then pour the mixture over the lamb shanks in the slow cooker.

Cooking

  • Cover and cook on low for 6-8 hours or until the lamb is tender.

Serving

  • Serve the lamb shanks with the herb-infused gravy, garnishing with fresh herbs if desired.

Notes

Brown the shanks well for deeper flavor. Skim fat from the gravy after cooking for a lighter sauce. Add a splash of lemon or vinegar at the end to brighten the gravy.
