  • 2 pieces ripe avocados
  • 8 oz cooked shrimp, chopped Use fresh or frozen shrimp.
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice Freshly squeezed is preferred.
  • to taste Salt and pepper

Preparation

  • Cut the avocados in half and remove the pit.
  • In a mixing bowl, combine the chopped shrimp, red onion, bell pepper, cilantro, lime juice, and season with salt and pepper.
  • Gently mix the ingredients together.
  • Spoon the shrimp mixture into the hollowed-out avocado halves.
  • Serve immediately and enjoy!

Notes

Serve with tortilla chips for a crunchy option, or garnish with extra cilantro or lime wedges for added flavor. Store leftover filling separately from the avocado to prevent browning.
