  • 1 cup tomato sauce
  • 2 cups vegan cheese
  • 1 cup plant-based pepperoni
  • 2 tablespoons olive oil for greasing

Preparation

  • Preheat the oven to 400°F (200°C).
  • Lightly grease a sheet pan with olive oil.
  • Spread a layer of tomato sauce on a tortilla, then sprinkle vegan cheese and add plant-based pepperoni.
  • Top with another tortilla.
  • Repeat to fill the sheet pan.

Cooking

  • Bake for 10-15 minutes, or until the tortillas are golden and crispy.
  • Cut into wedges and serve hot.

Notes

Don’t overload with sauce or the tortillas can get soggy. Use parchment under the tortillas to make clean up easy. Press down lightly on each quesadilla so they stick together well before baking.
