Ingredients
  

For the Oatmeal

  • 1 cup rolled oats
  • 2 cups water or broth Using broth adds richer flavor.
  • 1 tablespoon sesame oil Keep over medium heat to avoid burning.
  • 1 tablespoon soy sauce Can swap for tamari to make gluten-free.
  • 1 tablespoon fresh ginger, minced Mince finely for better flavor distribution.
  • to taste salt and pepper

For Topping

  • 2 pieces poached eggs Poach in water with a splash of vinegar for neat whites.
  • to taste chopped spring onions For garnish.
  • to taste toasted sesame seeds For garnish.

Instructions
 

Preparation

  • In a saucepan, bring water or broth to a boil.
  • Stir in the oats and reduce to a simmer. Cook for about 5-7 minutes until creamy.
  • In a separate pan, heat the sesame oil over medium heat and sauté the minced ginger until fragrant.
  • Add the cooked oats to the ginger and oil and mix in soy sauce, salt, and pepper to taste.

Serving

  • Serve in bowls, topping each with a poached egg, chopped spring onions, and toasted sesame seeds.

Notes

Store leftover oats in an airtight container in the fridge for up to 3 days. Reheat with a splash of water or broth to loosen. Poached eggs are best made fresh, but you can keep extra hard-boiled eggs for a quick swap.
