Ingredients
  

For the filling

  • 1 tablespoon sesame oil
  • 1/4 cup diced yellow or white onion
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger or ginger paste
  • 10 oz ground chicken
  • 1/4 cup low-sodium soy sauce or coconut aminos
  • 2 tablespoons Thai sweet red chili sauce
  • 1 juice of lime
  • 1 teaspoon maple syrup or honey
  • 1/3 cup chopped cashews (raw or roasted)
  • 1/4 cup chopped scallions
  • 1/4 cup fresh cilantro, chopped
  • 1/4-1/2 cup shredded carrots
  • to taste for garnish Sesame seeds
  • 1 head butter lettuce, leaves separated, rinsed, and dried

Instructions
 

Preparation

  • Heat sesame oil in a skillet over medium-high heat. Add diced onions and sauté for 2-3 minutes until softened and translucent.
  • Add minced garlic and ginger, stirring continuously for another 2 minutes.
  • Add ground chicken to the skillet, breaking it up with a wooden spoon. Season lightly with salt and pepper. Cook for about 3-4 minutes until golden brown and fully cooked.
  • In a small bowl, whisk together soy sauce, Thai chili sauce, lime juice, and maple syrup (or honey).
  • Pour the sauce over the cooked chicken and sprinkle with chopped cashews. Stir everything together, then reduce heat to low and let cook for an additional 2 minutes.
  • Remove from heat, allowing the mixture to cool slightly before adding shredded carrots, scallions, and cilantro.
  • Place a spoonful of the chicken mixture into each butter lettuce leaf. Top with additional pan sauce and a sprinkle of sesame seeds.
  • Repeat with remaining lettuce leaves and serve immediately.

Notes

Store the cooked chicken mixture in an airtight container in the fridge for up to 3 days. Keep the lettuce leaves separate and dry in the crisper to avoid sogginess. Reheat the chicken gently in a skillet or microwave and assemble fresh when ready to eat. Tips include using butter lettuce for soft, wide leaves and adjusting the sauce's lime or sweetener to balance heat.
