  • 1 pound ground beef
  • 1 cup mushrooms, sliced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish Chopped

Cooking

  • In a large pot, heat olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until softened.
  • Add the ground beef and cook until browned.
  • Stir in the mushrooms and cook until they are tender.
  • Add the rice and toast for 1-2 minutes.
  • Pour in the beef broth, add thyme, salt, and pepper.
  • Bring to a boil, then cover and simmer for 18-20 minutes or until rice is cooked.
  • Fluff the rice with a fork and serve garnished with fresh parsley.

Notes

Serve hot, garnished with parsley. Pairs well with a side salad or warm bread. Store leftovers in the fridge for up to 3 days.
