Ingredients
  

For the Sausage and Mash

  • 4 pieces sausages (pork or beef)
  • 4 large potatoes for mashing
  • 2 tablespoons butter
  • 1/2 cup milk for creamy mash

For the Onion Gravy

  • 1 large onion, sliced
  • 1 tablespoon flour to thicken gravy
  • 1 cup beef stock
  • Salt and pepper to taste

For the Vegetables

  • 2 cups mixed vegetables (e.g., carrots, peas, broccoli) steamed or boiled

Instructions
 

Cooking Sausages

  • Cook the sausages in a skillet over medium heat until browned and cooked through. Set aside.

Making the Mash

  • Peel and chop the potatoes, then boil in salted water until tender. Drain and mash with butter and milk. Season with salt and pepper.

Preparing the Onion Gravy

  • In the same skillet, add the sliced onion and sauté until softened and caramelized.
  • Stir in the flour and cook for 1-2 minutes.
  • Gradually add the beef stock, stirring until the gravy thickens. Season to taste.

Cooking the Vegetables

  • In a separate pot, steam or boil the mixed vegetables until tender.

Serving

  • Serve the sausages on a bed of mashed potatoes, topped with onion gravy and accompanied by mixed vegetables.

Notes

Add a pat of butter to the mash for shine. Spoon extra gravy in a small jug for those who want more. Garnish with chopped parsley or chives if available.
