  • 1 can sardines in oil
  • 2 slices bread (white or wholegrain) Use fresh toasted bread for crunch.
  • to taste butter or margarine (optional) Spread a thin layer on toast if desired.
  • to taste lemon juice (optional) Drizzle over sardines if desired.
  • to taste salt and pepper Season to taste.
  • for garnish chopped parsley (optional) Add for garnish if desired.

Preparation

  • Toast the slices of bread until golden brown.
  • If using, spread a thin layer of butter or margarine on each slice of toast.
  • Open the can of sardines and drain excess oil.
  • Place the sardines on top of the toasted bread.
  • Drizzle with lemon juice if desired, and season with salt and pepper.
  • Garnish with chopped parsley if you like.
  • Serve immediately.

Notes

Sardines on Toast are best eaten right away. If you must store, keep sardines separately in a sealed container in the fridge for up to 2 days. Do not leave the toast too long after topping; it will get soggy.
