  • 1 can canned sardines in olive oil Use the oil from the sardine can for extra flavor.
  • 1/2 cup black olives, pitted Can swap for green olives if desired.
  • 1/4 cup capers, drained
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon red pepper flakes (optional) Reduce or skip for kids.

Preparation

  • In a food processor, combine sardines, black olives, capers, lemon juice, garlic, parsley, and red pepper flakes.
  • Pulse until finely chopped but still a bit chunky.
  • Taste and season with salt and pepper as needed.
  • Transfer to a bowl and let sit for 30 minutes to allow flavors to meld.

Serving

  • Serve with crackers or bread.
  • Good options include crackers, crostini, or toasted baguette slices.
  • Can also be used as a sandwich spread or on roasted vegetables.

Notes

Store in an airtight container in the fridge and use within 3–4 days for best taste. If oil separates, stir before serving. Let it rest for at least 30 minutes so the lemon and capers mellow the fish taste. Over-processing makes the spread too smooth; pulse gently for a chunky texture.
