  • 1 whole whole turkey (12-14 pounds)
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 whole onion, quartered
  • 4 cups chicken broth For basting

Preparation

  • Preheat your oven to 325°F (165°C).
  • Remove the turkey giblets and pat the turkey dry with paper towels.
  • Rub softened butter all over the turkey, including under the skin.
  • Season the turkey with salt, pepper, thyme, and rosemary.
  • Place the onion inside the turkey cavity.

Roasting

  • Pour chicken broth into the roasting pan.
  • Place the turkey on a rack in the roasting pan.
  • Roast the turkey for about 2 to 2 1/2 hours, or until the internal temperature reaches 165°F (74°C).
  • Baste the turkey with the broth every 30 minutes.
  • Let it rest for 20-30 minutes before carving.

Notes

Use a meat thermometer to check the turkey’s temperature. Let the turkey rest to keep the meat juicy. Basting helps ensure a golden-brown skin. Feel free to add your favorite herbs and spices for a unique flavor. For a variation, try herb-brining your turkey before roasting.
