Ingredients
  

Main Ingredients

  • 1 whole whole piece of gammon (ham) Choose a piece suited for roasting.
  • 1 whole scotch bonnet chilli Keep whole for less heat.
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive oil For rubbing the gammon.
  • optional Fresh herbs Add for extra aroma.

Preparation

  • Preheat your oven to 180°C (350°F).
  • Rinse the gammon under cold water, then place it in a roasting pan.
  • Score the surface of the gammon and rub it with olive oil, salt, and pepper.
  • Place the whole scotch bonnet chilli on top of the gammon.

Roasting

  • Cover the pan with foil and roast in the oven for about 1.5 to 2 hours.
  • Remove the foil and cook for an additional 30 minutes for a crispy exterior.
  • Let rest before slicing and serve.

Notes

Slice the gammon thin or thick based on taste. Serve with plain starch like mashed potatoes or steamed rice to tame the heat. Consider sweet glaze or mustard on the side for those wanting less heat. Cool and store wrapped in an airtight container in the fridge for up to 4 days.
