  • ½ pound Brussels sprouts, trimmed and halved (about 2 ½ cups)
  • ½ tablespoon avocado oil
  • cup blue cheese crumbles (about 1.5 ounces)
  • 2 slices bacon, cut into 1-inch pieces
  • Salt and pepper, to taste

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss halved Brussels sprouts with avocado oil, salt, and pepper. Place them cut side down on the prepared baking sheet.
  • Roast cut side down for 12–15 minutes until they brown and soften.
  • While sprouts roast, crumble blue cheese and cut bacon into 1-inch pieces.

Assembly

  • Flip sprouts, top each with bacon and a small crumble of blue cheese, and skewer with a toothpick.
  • Return to oven for 10–15 minutes until bacon is crispy and cheese melts.
  • Let cool slightly before serving.

Notes

Serve warm for the best texture. Store leftovers in an airtight container for up to 3 days. Reheat in a low oven or air fryer to restore crispiness.
