Ingredients
  

Main Ingredients

  • 1 whole whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
  • 1 lemon, cut into wedges
  • 4 cloves garlic, minced
  • to taste Fresh herbs (like thyme or rosemary)
  • as needed Vegetables for roasting (like carrots, potatoes, and onions)

Instructions
 

Preparation

  • Preheat the oven to 425°F (220°C).
  • Pat the chicken dry with paper towels.
  • Rub the outside of the chicken with olive oil, and season generously with salt and pepper.
  • Stuff the cavity of the chicken with lemon wedges, garlic, and fresh herbs.
  • Place the chicken in a roasting pan, and surround it with your choice of chopped vegetables.

Cooking

  • Roast in the preheated oven for about 1 hour and 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Let the chicken rest for 10-15 minutes before carving.

Serving

  • Carve the Roast Chicken Dinner and place slices on a warm platter.
  • Serve with the roasted vegetables and spoon pan juices over the chicken.

Notes

Pat the chicken very dry for crisp skin. Use a meat thermometer to check the internal temp. For extra flavor, rub butter under the skin. For a different flavor profile, try a recipe with coconut and basil.
